I’ve made contact!  With a wonderfully helpful woman who is an Registered Dietitian Nutritionist (RDN).  She has been immensely helpful in giving me advice from an inside perspective on what steps are worth taking and where to look in order to gain the information necessary to take those steps.  Step One (after finding a respectful mentor to guide me in this process) is to contact the Academy of Nutrition and Dietetics, pointedly Accreditation Council for Education in Nutrition and Dietetics (ACEND).  Check out the ACEND Website.
